Abstract

The modern business industry, characterized by high competition and strict efficiency requirements, emphasizes the importance of implementing lean technologies as a key tool for optimizing business processes. The application of lean methods and tools, which have become widespread, contributes to improving the operational efficiency of enterprises at all levels of their functioning. Enterprises need to focus on optimizing production processes, eliminating losses and eliminating efforts that do not add value to ensure competitiveness, increase profits and provide customers with quality products in a short time. The present research is devoted to the study of practical experience in the application of lean tools by Russian and foreign organizations of various industries. The peculiarities, advantages and problems associated with the implementation of the lean production concept are considered. The article presents the results of a pilot project on implementation of lean-technologies at a meat-processing enterprise, aimed at optimizing the activity of a canning shop. The main attention is paid to the basic methods of lean production: the system of organization of safe and efficient workplace (5S), value stream mapping, standardization of work, quick changeover (SMED) and the system of collecting suggestions for improvements (Kaizen). In the course of the work, the current state of the pilot flow was assessed to identify existing losses and problems. The main directions of value stream optimization, loss minimization and elimination of the identified problems were developed. The results of implementation of lean-technologies in the canning shop were evaluated, which allowed to significantly improve the key performance indicators of the enterprise. The dynamics of the obtained results confirms the high efficiency of lean production and the necessity to spread the successful experience to other processes and flows functioning at the enterprise.
