Abstract

The Doctrine of national food safety defines dairy cattle products as being of paramount importance in the diet of the population of the Russian Federation. Dairy cattle breeding accounts for a significant share in the structure of animal husbandry – about 35%. Milk is an indispensable product for replenishing vitamins, full-fledged proteins, amino acids, etc. in the human body. The use of milk as a food product for infants and young children makes it possible to classify it as a strategically important, irreplaceable product. The dairy cattle industry is critically important for the country’s economy and the livelihood of the population. The turnover of dairy products is 15% of the turnover in retail chains, over 1.3 million people work in the dairy industry at more than 20 thousand enterprises for processing and production of dairy cattle products. Dairy cattle breeding is one of the traditional branches of agriculture both in our region and in the Northwestern Federal District. Currently, digital innovations and technologies are being actively introduced, considering the production potential of agricultural enterprises. As a result of the conducted research, we carried out a structural analysis of the enterprise, considering the specific weight of the main and additional industries. A typical structure of a dairy agricultural enterprise was proposed, which allows maintaining production potential and high production efficiency, as well as contributing to the consolidation of personnel in rural areas. This article is of interest to the heads (administrations) of agricultural enterprises, municipalities and regional ministries of agriculture, as well as to the scientific community engaged in research on dairy cattle breeding. The application of the obtained results in practice can determine the prospects for further goal setting, considering the possibility of achieving the desired quantitative and qualitative characteristics of scientific and innovative development of regions in the future.
